OUR STORY
AC Farmhouse Charcuterie is the creation of Arnie and Conrad, two friends with a shared passion for good food, for keeping old food traditions alive and for exploring new and exciting directions with food.
Arnie’s father Carlo, a butcher from Rome, migrated to Australia in 1971 where he met Angela from Sicily, and together they opened AC Butchery in Leichhardt. For the next 45 years their shop was renowned for the quality of its produce, and over time they began producing a variety of specialist Italian smallgoods and gourmet sausages to expand their range. Carlo, a passionate foodie, pioneer and innovator in everything he did, was inducted into the Gourmet Traveller Food Hall of Fame in 2003. The Colaiacomo family and their wonderful shop, which won numerous awards, were at the forefront of the evolving food culture in Sydney.
The family has a long association with Mudgee, where the Mediterranean climate allowed them to develop a vineyard, plant olive trees, farm rabbits, make homemade vino cotto and maintain a traditional Italian orto for their fresh vegetables. Arnie and his sister, with her family, are now based permanently in Mudgee.
Conrad has a long association with the Colaiacomo family, having distributed AC smallgoods for many years through his retail shop and to fine restaurants in the Blue Mountains. He has a wealth of knowledge in sourcing and supplying premium produce to restaurants.
Arnie and Conrad’s working relationship evolved into a strong friendship and they are delighted to combine their skills in the creation of this exciting range of charcuterie.
In 2002 AC Butchery won the Gourmet Traveller Jaguar Award and Carlo was inducted into the Gourmet Traveller Food Hall of Fame. Each year from 2003-2007 the shop won the Inner West Chamber of Commerce Small Business of the Year in the Butcher/Deli category and in 2007 it also won the overall Small Business of the Year.
